Pumpkin Maple Caramel Cake

A moist, fluffy, and tender, spiced pumpkin cake made with roasted kabocha squash (also known as Japanese pumpkin) from gathering together farm. Flavored with pumpkin pie spices, topped with silky cream cheese buttercream, maple caramel, roasted pepitas, pomegranate seeds, and candied local cranberries. Cake is a 9 inch loaf cake that serves 8-12.
